It's been awhile

Boy, am I not consistent...so much has been happening in my life....I look forward to what lies ahead....spending time with the grandchildren....and continuous learning life lessons....

The search for good food is always at the front of my mind...but I end up staying with the same old stuff for the most part...because it's so darn good for you, tasty, and just yummy

I will post some recipes in the future...but today, I just wanted to catch up a little with life....

My yard looks amazingly green with bushes and flowers ... course there are always new and wonderful things to make a home look better...my goal is always cosiness ....

I will get back here soon...

good days and bad days

Well, I wanted to be positive for most of the time, however life isn't always positive and it's stupid to believe that it should be.....how would we learn????  I am finding that I am very tired lately....could it be from doing 25 laps at the walking track two days in a row and then 20 on top of that??  Anyhoo, I am tired and going back to work, which I am happy about....it gets me going again...

We had a chicken dinner last night, after our student came home, finally lol/she got lost on the bus...poor girl...

We spent some time before dinner looking for her and then finally we found her walking home....I told her sister now that we have found her, we can kill her....joking of course...lol  We were worried....

I told the girls that (we have two japanese students, sisters) they need to leave the college "together" so that this doesn't happen as the younger one (who got lost) has only a certain amount of english...but she is a smart cookie too....

Making clean changes to your everyday foods!!

Making changes to your everyday foods:

Try using brown rice pasta by Tinkyada Pasta Joy ready (gluten free) it is very good and does not get mushy...yummers (my adult kids even liked it)  
I put bruschetta with the pasta instead of any tomato sauces because it is just plain healthier...YOU CAN BUY THIS AT PRICE SMART IN FSJ

Candida diet to Clean Eating

I thought that I should point out for those who would like to try the candida diet, that it is only the start of your life changing process....after it is over and you know what foods that don't bother your digestive system through the process of elimination and repopulation, I bought myself "The Best of Clean Eating" cookbook....many awesome recipes in this book...

The diet is not a diet but a lifestyle change .... eating to live instead of living to eat....

I want to make clear that when I did the www.thecandidadiet.com    I did not do the pre-cleanse...I started right away with the detox and was able to still eat good clean healthy foods and then some...so don't make it harder on yourselves by starting with the pre-cleanse if you really don't want to.....do it another time in your life when it's a good time for you....however the detox is just as good in many ways and it worked for me without suffering too much....

Although, I did eliminate sugar, dairy and bread (gluten) one week prior to me starting the detox.

Bragg's Apple Cider Vinegar & veg's

My favourite foods that has sustained me throughout the day, especially when at work on the road is cut up veg's and Bragg's ACV....yum  yum.....it just seems to have what I need:

I cut up: all you would use in a greek salad, pretty much except for the onions

1 red pepper
1 yellow and orange pepper (I don't like green peppers but you certainly can use them)
1 whole cucumber
2 tomatoes

put into a plastic container, pour dressing over the veg's and put lid on...refrigerate

Use 1/2 and 1/2 of ACV and olive oil (not extra virgin, unless you actually like it lol) or a little less oil
1 garlic clove (crushed)  Mix together really well and pour over your vegs (whichever you  may pick)

I hated peppers until I did this recipe above...my very own invention...

Back in town!!

It's funny how a person can leave their snowy cold town, go to an apparent nicer climate, and miss their hometown......well I am back in town and ready to renew my commitment to myself about eating healthy.

I ate pretty healthy whilst I was away, however it begins to be a hit and miss type of chore when you have to settle for restaurant foods.....I have to say I was pretty cranky!  Will I be prepared for my next venture....you betcha!!

I did some grocery shopping while I was in Nanaimo, begged for utensils and knives from the kitchen/restaurant staff..only to go to my grandson's mom's the next day with the convenience of proper "stuff" to prepare my vegs that I so kindly (lol) shared with my hubby and grandson....

March 30th/2011

It was a new work day for me...so I prepared my vegs of red peppers (my fav), cucumbers and tomatoes last night for my lunch...

I am finding now that I really need to be more prepared with a huge lunch so that I can constantly stuff my face with all of the right healthy foods....really vegs in ACV, olive oil and a clove of garlic truly does the trick...gives the vegs a kick!!

Prepared two pieces of mountain bread with a tsp each of almond/hazelnut butter (yum) an apple and about 10 plain almonds...that was my lunch...but it was not enough to satisfy my tummy...shall cook up some protein for tomorrow's lunch of chicken breast /rice and vegs.....

We have two Japanese students (sisters) coming here tomorrow so I have to get some good food cooked up for them...hubby will have to pick them up as I am working and he is working earlier in the day and at night....

I will get back to you with more information but just remember that I am a baby at this "clean eating" stuff and although I have lost 25 lbs, I still need to study and get the information into this brain of mine to be of some assistance to you all...if needed that is...have a wonderful night...Colleen

Getting Ready for work

today I packed my lunch of a pre-made greek salad/grated feta cheese (advice from my health coach)
green apple with plain almonds
2 water/I already drank 2 this morning
1 grapefruit


2 mountain bread with 1 tsp each of almond butter....


I have to improve on my lunch choices....get some canned salmon in tomorrow
